OKPA(OKPA NSUKKA/OKPA WAWA/OKPA 9TH MILE)

My mum happened to come from the part of enugu (Nsukka) known for their popular proteinous delicacy called Okpa. Okpa is made from Bambara nuts powder. It is less soiced with artifical flavoring or spices as the Okpa in itself is quite delicious.

The major ingredients for making Okpa are:

Okpa (Bambara nuts powder)

Palm oil

Scotch bonnets(red pepper)

salt

However some people add the following ingredients as ectrae to this delicacy. They include;

Onions (finely chopped)

Crayfish (ground)

Uziza leaves

And others.

PREPARATION:

Sieve the Okpa powder into a big bowl

Add palm oil.

Mix the above contents together using your washed hands or a spatula.

Add more palm oil if necessary but you. Just note the mixture is only ready when it’s consistency is like that of a smooth stretchy dough.

Pour in about 1.5litres of water and start boiling.

Add about 1 litre of tepid water (warm water) into the mixture.

Dissolve until everything has a consistency that can stain a spatula (wooden spoon)

Add your blended or pounded peppers

Add salt. Adjust taste accordingly.

Add the other optional ingredients.

In a transparent bag, begin to scoop in some of the mixtures in sizes not too much as they will eventually rise.

Add the transparent tied Okpa mixture into the pot of boiling water.

N/B: it is important you shake each bag properly before you add to the pot. This is to incorporate every part of the mixture.

Cook for 1hr, 20 minutes.

Your Okpa is ready to be consumed 😁
